{"id":933,"date":"2024-01-03T12:44:37","date_gmt":"2024-01-03T11:44:37","guid":{"rendered":"http:\/\/spang.ch\/cook\/?p=933"},"modified":"2024-01-03T12:45:04","modified_gmt":"2024-01-03T11:45:04","slug":"udons","status":"publish","type":"post","link":"https:\/\/spang.ch\/cook\/en\/udons\/","title":{"rendered":"Udons (nouilles japonaises)"},"content":{"rendered":"<body>\n<p><em>Base du bouillon:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cs tahini<\/li>\n\n\n\n<li>1 cs p\u00e2te de miso (recette originale: miso blanc)<\/li>\n\n\n\n<li>3 cs sauce soja<\/li>\n\n\n\n<li>1 cc huile de s\u00e9same<\/li>\n\n\n\n<li>1 cc huile piment\u00e9e ou Gochujang<\/li>\n\n\n\n<li>\u00bd cc d\u2019ail semoule\/ail press\u00e9<\/li>\n\n\n\n<li>env 500ml d\u2019eau bouillante<\/li>\n<\/ul>\n\n\n\n<p><em>Les garnitures:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 poign\u00e9e de carottes r\u00e2p\u00e9es<\/li>\n\n\n\n<li>1 poign\u00e9e d\u2019oignons nouveaux \u00e9minc\u00e9s tr\u00e8s finement<\/li>\n\n\n\n<li>1 oeuf mollet ou poch\u00e9 (optionnel)<\/li>\n\n\n\n<li>tranches de lard (optionnel)<\/li>\n\n\n\n<li>60g de nouilles ou udons (ou alors beaucoup plus en ce qui nous concerne)<\/li>\n\n\n\n<li>1 poign\u00e9e de chou \u00e9minc\u00e9 tr\u00e8s finement<\/li>\n\n\n\n<li>ou n\u2019importe quels autres l\u00e9gumes\u2026 tout est bon! un peu de cr\u00e9ativit\u00e9!<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\">\n\n\n\n<p>La recette originale propose de m\u00e9langer les ingr\u00e9dients du bouillon dans un bol, d\u2019y ajouter les l\u00e9gumes, de verser de l\u2019eau et d\u2019attendre quelques minutes avant d\u2019ajouter les p\u00e2tes cuites s\u00e9par\u00e9ment (et pass\u00e9es \u00e0 l\u2019eau froide pour arr\u00eater la cuisson). <\/p>\n\n\n\n<p>Nous on a plut\u00f4t fait le m\u00e9lange dans une casserole et vers\u00e9 de l\u2019eau bouillante, laiss\u00e9 les l\u00e9gumes et le bouillon prendre quelques minutes puis ajout\u00e9 les udons 2 minutes avant de servir. Parfois on a laiss\u00e9 mariner plus longtemps et \u00e7a allait tr\u00e8s bien aussi. A force de r\u00e9p\u00e9ter la recette, toutes les proportions ont \u00e9t\u00e9 faites plus ou moins \u00e0 l\u2019oeil. Il faut surtout s\u2019assurer d\u2019avoir un bouillon assez go\u00fbtu selon la proportion d\u2019eau.<\/p>\n\n\n\n<p>On a bien vari\u00e9 les l\u00e9gumes en mettant du poivron, des oignons et des champignons en fines lamelles (possible de mettre des \u00e9pinards, brocolis, etc). On a press\u00e9 du jus de citron dans la soupe. Puis on a servir dans des assiettes creuses et ajout\u00e9 des fines lamelles de concombre cru, les tranches de lard, les oeufs poch\u00e9s, de la coriandre et des grains de s\u00e9same toast\u00e9s. D\u00e9licieux!
